Simple Chinese Recipes on the Road
Why not infuse some authentic Chinese flavours into a campfire meal!
Water spinach stir fry
TOTAL TIME: 10 minutes
Serves: 3
Ingredients:
- 3 bunches water spinach (from Asian grocer)
- 1tbsp sesame oil
- 1tsp dry red chilli flakes
- 3-4 garlic cloves, chopped finely
- ¼tsp Schezwan peppercorns, crushed
- Salt, to taste
- Garnish with roasted sesame seeds
Method:
Heat oil in a frying pan over medium-high heat on a campfire.
Add chillies and peppercorns, frying for a minute, then add garlic and water spinach.
Stir fry until spinach is wilted, then take off the heat.
Stir in the salt and garnish with roasted sesame seeds to serve.
Spicy chilli beef skewers
TOTAL TIME: 60 minutes (includes marinade time)
Serves: 12 skewers
Ingredients:
- 1kg beef sirloin, cut into 2.5cm cubes
- ½ cup vegetable oil (for basting)
- Lemon wedges, to serve
- Marinade
- 1tsp ginger powder
- 1tsp ground cumin
- 2tsp dried chilli flakes
- 1tsp ground coriander
- 1tsp ground nutmeg
- 3 sp salt
- 3 garlic cloves, finely chopped
- ¼ cup vegetable oil
- 3tbsp soy sauce
Method:
First, soak 12 bamboo skewers in water for 20 minutes.
Combine all the marinade ingredients into a bowl.
Chop the beef sirloin and add to the bowl, coating the meat in the marinade. Cover and place in the fridge for 30 minutes. (Best to prep and store before camping).
Thread the beef onto the skewers. Add oil to a grill and cook over medium-high heat for 3 minutes each side.
During cooking, baste the beef with the olive oil.
Serve with lemon wedges and water spinach stir fry.
Good fortune cocktail
TOTAL TIME: 5 minutes
Serves: 1
Ingredients:
- ½ ounce cherry brandy
- 1 ½ ounces gin
- 4 ounces orange juice
- Ginger ale
Method:
Pour brandy, gin and orange juice into a glass with ice and stir well (or add to a cocktail shaker and shake well).
Top with ginger ale and stir again. Garnish with orange peel and a maraschino cherry for extra good fortune.
